Cast iron baked chicken breast



  •  2-4 bone in chicken breast.

  • Avocado/olive oil blend- (I use California Olive Ranch Avocado Blend EVOO)

  • Garlic Powder

  • Salt and Pepper




  1. Place a cast iron skillet in the oven and preheat to 375 degrees.

  2. Wash and pat dry 2-4 bone in chicken breast.

  3. Coat with avocado/ olive oil blend or any oil you of choose.

  4. Season generously with garlic powder, salt and pepper. 

  5. Once skillet is to temp place on stove top on high heat and add a good amount of the avocado/olive oil blend to completely coat the bottom of the pan.

  6. Brown both sides of the chicken in skillet starting with skin side down about 5 minutes and then flip for another 3.  

  7. Place in oven skin side up at 375 for 30 minutes.

  8. Once it is done I pull the skin off and chop up the chicken. Then I toss it in the pan to coat it with the oil. This is where all the flavor is!


I serve this with sweet potato fries and grilled asparagus.
