chicken parmesan


  • 1-2 lbs. chicken breast, pounded to 1/4 inch thick

  • 1/2 stick grass fed butter, ghee or coconut oil with butter flavoring

  • 4 cloves garlic, pressed

  • 3/4 cup coconut flour

  • 1 tsp sea salt

  • 1 tsp garlic powder

  • 1/2 tsp dried basil

  • 1/2 tsp pepper

  • 1/4 cup parmesan cheese, optional

  • 4-6 slices of cheese of choice, I like to use provolone or buffalo mozzarella -  omit if dairy free


  1. In a shallow bowl mix together, coconut flour, sea salt, garlic powder, dried basil, pepper and parmesan cheese.

  2. In another shallow bowl melt butter or ghee and add pressed garlic.

  3. Take the pounded chicken breast and dip into the butter and garlic mixture, then dip into the coconut flour and seasoning mixture. Pressing down on each side to coat the chicken.

  4. Place coated chicken onto a baking sheet with rack.

  5. Bake chicken at 400 degrees for 10 minutes, flip and cook for another 10 minutes.

  6. Remove baking sheet from the oven and set oven to broil.

  7. Top chicken with cheese and place under the broiler until cheese is melted.

  8. Top with marinara sauce. 

  9. Serve with grain free pasta, zucchini noodles or grilled zucchini.
